Tucked beneath Bermondsey’s railway arches, Neal’s Yard Dairy matures some of the finest cheeses in Britain. One standout is Isle of Mull cheddar, a robust raw milk cheese made the traditional way by the Reade family on a remote Scottish island. The farm, Sgriob-Ruadh, was rescued from ruin in the 1980s and is now home to a herd of happy cows, whose varied diet shapes each unique batch of cheese. From spiky and citrusy to mild with a hint of chive, the flavour always reflects the land. The cheese is unpasteurised, uncoloured, and deeply rooted in its wild environment.
